These tapas are very easy to make so are perfect for a snack or the dinner plate.
4 courgettes, top and tailed, sliced lengthways
¼ cup cream cheese
white pepper, to taste
1 Tbsp blanched, sliced almonds
1-2 Tbsp chopped mint or parsley
In a large pan, heat a little lightly salted water to boiling.
Add sliced courgette and cook until just soft.
Drain and place in tapas dish.
Mix together cream cheese, pepper and almonds.
Place over courgettes and serve sprinkled with mint or parsley.
