Crunchy green salad
Coleslaw is another name for a salad based on raw cabbage. This coleslaw classic is an old favourite.
3 cups finely sliced green cabbage
2 spring onions, sliced
¼ cup finely chopped mint
3 tomatoes, sliced in wedges
2 Tbsp lite olive oil
2 Tbsp lemon juice
½ tsp ground cumin
1 tsp sugar
Place cabbage, onions and mint in a large bowl.
Make the dressing and pour over the salad.
Mix thoroughly, decorate with tomato wedges and serve.
To make the dressing:
Blend oil, lemon juice, cumin and sugar together.
