Cucumber and yoghurt dip
There are plenty of ways to enjoy this versatile dip which is also known as tsatziki. Try it with falafels, pita crisp, crudites, or lamb kofte.
1 cucumber, grated
1 clove garlic, crushed
¼ cup chopped mint leaves
1 ½ cups plain unsweetened yoghurt
1 Tbsp lemon juice or vinegar
Place grated cucumber in a sieve or clean tea towel and squeeze out the excess liquid.
Mix all ingredients in a bowl.
Cover and place in the fridge until ready to serve.
• with lamb kofte and salad
• pita crisps and crudites - asparagus, carrot, capsicum
• with falafel in pita bread and salad
• with curry - used like raita.
