Cucumber, carrot and rocket
Hidden beneath the carrot are slices of cucumber. The fresher the vegetables the better the flavour - often the most simple combinations like this one taste the best.
2 cups rocket
1 telegraph cucumber, finely sliced into ribbons
1 carrot, finely sliced into narrow ribbons
2-3 Tbsp balsamic or lemon vinaigrette
Place rocket on a serving dish. Spread cucumber slices over the rocket.
Top with carrot ribbons. Drizzle with vinaigrette.
