Curried pork lap lap
A delicious dish with a very different presentation. Watch the video how to make this recipe.
2 cups grated kūmara
2 cups grated pumpkin
½ cup coconut cream
1 Tbsp curry powder
400g pork mince
2 spring onion, finely chopped
2 cup chopped silverbeet or spinach
1 Tbsp soy sauce
4 pieces baking paper, about 25 cm square
Preheat oven to 200°C.
In a large bowl mix together all ingredients (except baking paper).
Divide mixture into four and place on pieces of baking paper. Fold to make an enclosed parcel.
Place on a roasting dish and bake in preheated oven for 30 minutes.
Remove from oven and served wrapped.
