Duck with carrot and celery

A delicious dish which can be cooked in advance and served with a baked potato or kūmara.

Duck with carrot and celery


Serves 2

canola oil spray
2 duck legs
4 carrots, peeled and sliced
4 stalks celery, sliced
2 cups orange juice
pinch salt
freshly ground black pepper, to taste
celery leaves for garnish


Preheat oven to 180°C.
Heat a heavy-based frying pan, lightly spray with oil. Brown duck on both sides.
Place carrots and celery in a baking dish and arrange duck on top.
Pour orange juice over and add salt and pepper.
Place in preheated oven and bake for 35-45 minutes or until duck is cooked.
Serve garnished with young celery leaves.
