1 medium eggplant, sliced into four 1.5 cm disks
1 Tbsp olive oil
freshly ground black pepper
1-2 Tbsp tomato sauce
½ cup finely chopped vegetables e.g. onion, capsicum
4 thick slices tomato
½ cup grated Mozzarella cheese
1-2 Tbsp chopped parsley
Preheat oven to 200°C.
Brush both sides of the eggplant slices with olive oil and sprinkle with salt and pepper.
Place on a baking sheet and bake in preheated oven for about 8 minutes, turning once.
Remove tray from the oven, spread the top of each eggplant slice with tomato sauce, add chopped vegetables and place a tomato slice on top.
Arrange grated cheese on top of the tomato.
Return to the oven for 4-5 minutes or until the cheese is melted.
Garnish with parsley and serve.
Optional: The eggplant can be peeled before slicing.
