Fruity Celebration Cake
What better way to celebrate than with a healthy "cake"
1 large watermelon
1 melon (rock melon or honeydew, or half and half)
2 kiwifruit, peeled and sliced into rounds
2 Tbsp blueberries
Cut the rock melon / honeydew melon in half lengthways and remove seeds. Place on a board and slice (0.5 – 1cm thickness).
Using cookie cutters, cut melon slices into a variety of shapes. Save the offcuts (see tip).
Cut two large cross section slices from the watermelon so they are about 6cm thick. Remove visible seeds.
Using plates as a guide (e.g. a small dinner plate and saucer), cut the larger slice into about a 20cm round and the smaller one into a 15cm round. Remove the rind.
Place the larger watermelon round on a platter or board. If it has cracks in the middle, you can fill these with offcuts of the watermelon. Top with the smaller round.
Decorate the cake with melon shapes, kiwifruit slices and blueberries.
Tip: Save the fruit offcuts to make salads, smoothies, popsicles or a fresh fruit platter.
