Fruity celebration cake
What better way to celebrate than with this healthy 'cake'.
4-6 large serves, or 10-12 small serves
1 large watermelon
1 melon (rock melon or honeydew, or half and half)
2 kiwifruit, peeled and sliced into rounds
2 Tbsp blueberries
Cut the rock melon/honeydew melon in half lengthwise and remove seeds. Place on a board and slice into pieces, 0.5 – 1 cm thick.
Using cookie cutters, cut melon slices into a variety of shapes. Save the off cuts (see tip).
Cut two large cross section slices from the watermelon so they are about 6 cm thick. Remove visible seeds.
Cut the larger slice into about a 20 cm round and the smaller one into a 15 cm round (see tip). Remove the rind.
Place the larger watermelon round on a platter or board. If it has cracks in the middle, you can fill these with off cuts. Top with the smaller round.
Decorate the cake with melon shapes, kiwifruit slices and blueberries.
Save the fruit off cuts to make salads, smoothies, popsicles or a fresh fruit platter.
Use plates as guide for the circles (e.g. a small dinner plate and saucer).
