Garlic and coriander fish
Garlic and coriander add zing to this fish dish.
500g firm white fish fillets
2 cloves garlic, peeled and crushed
¼ cup sweet chilli sauce
½ cup lite coconut milk
1 Tbsp fish sauce (optional)
1 lemon, juice of
3 Tbsp chopped coriander
wedge of lemon for garnish
Preheat oven to 200˚C.
Place fish fillets in an ovenproof baking dish.
Place garlic, chilli sauce, coconut milk, fish sauce and lemon juice in a bowl and mix well. Pour over fish.
Bake in preheated oven for 10-15 minutes or until fish is cooked through.
Garnish with coriander and lemon slice.
Serve with a green salad and slices of tomato on a bed of rice.
Variation: Serve with a baked kūmara and a green salad.
Tip: If using coconut cream, use half water and half coconut cream.
