Visually different to traditional red beetroot, golden beetroot makes a tasty colourful dish. Try this recipe with Chioggia beetroot for a different look.
2 yellow beetroot, thinly sliced
¼ cup apple cider vinegar
1 Tbsp olive oil
white pepper, to taste
1 tsp chopped parsley
Place beetroot in a bowl.
Mix vinegar, oil, pepper and salt together and pour over.
Sprinkle with parsley and serve.
