Green bean and feta salad
This is a superb summer lunch dish.
300g green beans, top and tailed
¼ cup olive oil
2 Tbsp red wine vinegar
1 clove garlic, peeled and crushed
freshly ground black pepper, to taste
1 red onion, sliced
½ cup black olives
100g feta, sliced into small chunks
Bring a heavy-based saucepan of water to the boil, add green beans and simmer for 3-5 minutes or until bright green in colour. Drain and place in iced water.
To make dressing, combine oil, vinegar, garlic, salt and pepper in a small bowl and mix.
Drain beans, and place with the onion, olives and feta into a serving dish.
Drizzle dressing over and serve with crusty bread.
