Green slaw with celery and tomatoes
Cabbage - such a versatile vegetable to serve hot or cold. Try this chilled coleslaw and make sure to slice the cabbage very finely..
4 cups finely sliced green cabbage
1 Tbsp chopped parsley
2 sticks celery, sliced
6 red and yellow cherry tomatoes, halved
¼ cup lite French dressing
Place cabbage, parsley, celery and tomatoes in a serving bowl.
Drizzle over the dressing and toss the slaw.
Variation: Use diced carrots in place of the tomatoes.
