Grilled chicken fillet kebabs
Try serving the chicken kebabs with mash potato, glazed carrots and a mix of green vegetables.
4 chicken thigh fillets, sliced into strips
2 Tbsp lemon juice
1 tbsp canola oil
freshly ground pepper to taste
kebab skewers, soaked
mashed potato, cooked carrots and spinach, to accompany
chopped fresh parsley
Mix the chicken with the lemon juice, oil and salt and pepper.
Marinate for 30 minutes or overnight.
Thread each chicken strip onto a skewer.
Grill or barbecue on each side until browned and cooked through.
Serve with carrots and spinach, garnished with parsley.
