Grilled fish wrap with pineapple and tomato salsa
Get the family to make their own fish wrap – so easy and so yummy.
2 tomatoes, finely diced
½ red capsicum, finely diced
2 cups finely diced pineapple, fresh or drained, canned pineapple
2 spring onions, finely sliced
½ cup chopped fresh coriander
4 tsp lemon juice
2 Tbsp canola oil
500g fish fillets
2 cups finely sliced lettuce
4 large wraps
Preheat the oven grill.
Place tomatoes, capsicum, pineapple, spring onion, coriander, lemon juice and oil in a large bowl and refrigerate until ready to serve.
Place fish fillets on a paper-lined baking tray and place under the hot grill. Turn once and continue to grill until the fish is cooked through.
Place each wrap on a plate, divide the lettuce among them, top with grilled fish and pineapple and tomato salsa.
Roll up and serve.
