Hangi in oven

Serves 4

4 large cabbage leaves
1 kumara, cut into 4cm pieces
1 potato, cut into 4cm pieces
¼ pumpkin, cut into 4cm pieces
8 chicken nibbles (or 4 drumsticks)
4 lamb chops
2 tsp dried mixed herbs
2 tsp smoked paprika (optional)
1 Tbsp canola oil

Heat oven to 180C.
In a large bowl mix the vegetables, meats, herbs, spices and oil so all are evenly coated.
In a large pot of boiling water blanch the cabbage leaves until they begin to soften.
Divide ingredients between the cabbage leaves and roll up so all ingredients are secured inside.
Place in a roasting dish that just fits all of the cabbage leaf parcels.
Pour half a cup of water into the roasting dish.
Cover with aluminium foil and bake for approximately 2 hours.
