A simple and delicious addition to any meal. Note the lower cooking temperature for this stir fry.
2 Tbsp canola oil
3 medium kūmara, washed and sliced into 1 cm slices
2 large carrots, unpeeled, sliced into 1 cm slices
2 cloves garlic, peeled and finely sliced
2 Tbsp honey
2 Tbsp vinegar
1 Tbsp canola oil
1 Tbsp finely grated fresh ginger
Heat oil until hot in a heavy-based pan or wok.
Add kūmara, carrot and garlic.
Stir fry over a medium heat for 10-12 minutes or until kūmara is golden brown and tender.
Transfer to a serving dish.
Add honey sauce ingredients to the pan or wok.
Heat to combine and pour over the vegetables. Serve warm.
