Hummus

Serves 4

1 cup dried chickpeas
1 tsp baking soda
1/3 cup tahini or peanut butter
¼ cup lemon juice
pinch ground cumin
pinch ground pepper
pinch smoked paprika
¼ cup cooking liquid from chickpeas

 

Soak the chickpeas in plenty of cold water overnight.
Drain the chickpeas.
In a large pot cover the chickpeas in water, add the baking soda and bring to the boil.
Simmer chickpeas for approximately 1 hour or until soft.
Drain the chickpeas and reserve the cooking liquid.
In a food processor while the chickpeas are still hot blend all remaining ingredients until smooth.

Serve with:
• Cauliflower tabbouleh
• Falafel
• Pita bread
• Vegetable sticks
