Kale and beetroot salad
Kale is a trendy new vegetable and so delicious in salads.
2 cups baby kale leaves
2-4 cooked baby beetroot, sliced into quarters
2-4 plum tomatoes, sliced in half
4-6 snow peas, blanched
¼ cup mayonnaise
1 Tbsp lemon juice
1 tsp lemon rind
¼ cup beetroot or tamarillo chutney
Place kale on a serving dish. Add beetroot, tomatoes and snow peas and toss.
Mix mayonnaise, lemon juice and rind together in a small bowl.
Serve salad with lemon mayonnaise and chutney on the side.
To blanch snow peas: Place in rapidly boiling water for 1-2 minutes until bright green.
Remove and cool in iced water or running cold water. Drain well.
