Kale and chicken soup

Kale and chicken soup


Serves 4

2 Tbsp canola oil
1 onion, sliced
2 carrots, sliced
2 cloves garlic, peeled and crushed
500g boneless diced chicken
1 chicken stock cube or 1 tsp chicken stock powder
4 cups water
4 cups chopped kale
1 x 400g can tomatoes, or 4 tomatoes, chopped


Heat oil in a large saucepan.
Add onion and carrots and cook over a low heat until soft.
Add garlic, chicken, stock cube, water, kale and tomatoes and bring to a simmer.
Cook gently for approximately 30-40 minutes or until chicken is cooked.
Serve in bowls accompanied by wholemeal bread rolls.
