Kale and orange capsicum salad

Trendy kale makes a great salad and looks and taste great with red tomatoes and orange capsicums.

Kale and orange capsicum salad

Ingredients

Serves 4

2-3 leaves of curly kale, leaves chopped, stems removed
2 orange capsicums, deseeded and chopped
8 cherry tomatoes, sliced in half
1-2 Tbsp pumpkin or sunflower seeds
¼ cup fresh herb vinaigrette

Method

Place kale, capsicums, tomatoes in a bowl.
Stir through the vinaigrette, cover and refrigerate until required.
Sprinkle with the seeds, and serve.

Variation: Try adding garlic to the fresh herb vinagriette.
