Kale, chorizo and tomato soup
Tasty and filling and delicious autumn to spring.
1 Tbsp canola oil
3 cloves garlic, peeled and diced
½ leek, thinly sliced
1 chorizo sausage, sliced
2 large tomatoes, peeled and chopped
2 boiling or new potatoes, diced
1 L boiling water
4 stalks kale, thinly sliced
freshly ground black pepper, to taste
Heat oil in a large heavy-based saucepan, add garlic and cook until it starts to become golden. Remove and keep warm.
Place leeks in the saucepan and cook, stirring for 2 -3 minutes.
Return garlic to saucepan, add chorizo, tomatoes, potatoes and water. Heat to boiling, reduce heat and simmer for about 15 minutes, or until potatoes are cooked.
Stir in kale, return to the boil, add salt and pepper and remove from heat. Serve.
