Kūmara and banana salad with pumpkin seeds

Serve this salad warm or cold, depending on the weather.

Kūmara and banana salad with pumpkin seeds


Serves 4

360g kūmara, cooked and diced
1 spring onion, finely sliced
1 banana, peeled, sliced
½ cup pumpkin seeds

½ tsp grated lemon rind
1 Tbsp lemon juice
1 Tbsp canola oil
½ tsp sugar
freshly ground black pepper, to taste


Place kūmara and spring onion in a bowl and mix.
Mix dressing ingredients together and pour over bananas in another bowl.
Add bananas to kūmara and mix.
Sprinkle with pumpkin seeds and serve.
