Kūmara and spinach bake
Plan your lunch – prepare double and take for lunch to heat at work the next day.
2-3 kūmaras, diced
3 cups shredded or baby spinach
¼ cup pine nuts
¼-½ cup sliced Parmesan cheese
chopped parsley, for garnish
Preheat oven to 180°C.
Spray 2 ovenproof dishes with oil.
Place the kūmara and spinach in a bowl and mix.
Distribute between the dishes.
Sprinkle over the Parmesan cheese and pine nuts.
Place in preheated oven and bake until the kūmara is soft when tested with a skewer and the cheese has melted and is golden.
Serve garnished with parsley.
