Kūmara wedges with tomato salsa
A healthy alternative to hot potato chips. Watch the video on how to make them.
3-4 kūmara, washed and sliced into wedges
2-3 tomatoes, cored and diced
1 spring onion, finely sliced
freshly ground black pepper, to taste
1 Tbsp sweet chilli sauce
Preheat oven to 200°C.
Place kūmara in a roasting pan and spray lightly with canola oil. Toss to coat.
Bake in preheated oven for 25-35 minutes or until golden brown and crunchy. Turn several times during cooking.
Mix all tomato salsa ingredients together and serve with kūmara wedges.
