Lettuce, pumpkin and diced bacon
Add colour to the table with this trio of tasty salads.
4 cups lettuce leaves
1-2 cups cooked, diced pumpkin
2 Tbsp vinaigrette
3 rashers bacon, cooked, chopped
1 Tbsp chopped parsley
Place lettuce in a bowl. Add pumpkin and drizzle with vinaigrette.
Top with bacon, garnish with parsley and serve.
