Mac 'n’ cheese with cauliflower sauce

½ cauliflower, sliced into pieces
1 cup grated cheese
1 tsp mustard powder (optional)
125g pasta shapes
4 cups mixed frozen vegetables
¼ cup breadcrumbs
Preheat oven to 200°C.
Bring a large saucepan of water to the boil.
Add cauliflower and cook for 10-15 minutes or until cauliflower is soft.
Remove cauliflower from water. Leave cooking water in the saucepan.
Place drained cauliflower, cheese, mustard and ½-1 cup of cooking water into a food processor and blend until very smooth.
For a thinner sauce add a little more water until it reaches the consistency required.
Bring water back to the boil and add pasta. Cook until tender then drain.
Mix sauce, pasta and mixed vegetables together and place in a large baking dish.
Sprinkle with breadcrumbs.
Bake in preheated oven for approximately 20-30 minutes or until golden brown and steaming hot.
Sauce can be frozen.
Use a whole cauliflower and make double.
The sauce can be used for any dish where a cheese sauce is required.
