Marinated roast kūmara
Roast kūmara is everyone's favourite - these delicious honey roasted kūmara are perfect straight from the oven, or cooled to serve as a salad or have in a sandwich.
3-4 medium kūmara, unpeeled, sliced ½ cm thick
1-2 red or green capsicums, deseeded and sliced into chunky wedges
¼ cup lemon juice
2 Tbsp lite olive or canola oil
2 Tbsp runny honey
salad greens, to serve
Preheat oven to 200°C.
Place kūmara and capsicums in a roasting pan.
Combine lemon juice, oil and honey.
Pour over vegetables and toss well.
Bake in preheated oven for 20-25 minutes or until tender and golden brown.
Serve as a hot dish or cool slightly and toss through lettuce leaves.
Variation: Marinate the kūmara in the lemon/honey mixture before cooking.
