Mediterranean flavours with avocados
Delicious as a lunch or an entrée.
2 firm ripe avocados
2 cups of filling: choose from a selection of Mediterranean flavours e.g.
sliced sundried tomatoes or capsicums, pitted olives, capers or chopped anchovies,
diced feta or goats cheese, or brie wedges
shaved salami or prosciutto ham
2-4 Tbsp vinaigrette or pesto dressing
Halve and de-stone the avocados.
Take a thin slice off the base of each half so they sit flat on a plate.
Generously pile ½ cup filling into the centre of, and over, each avocado half.
Drizzle with vinaigrette and serve.
Serving suggestion: serve with salad greens and crusty bread.
