Mediterranean vegetable dish
The great vegetables of the Mediterranean combine to make this full-of-flavour dish.
¼ cup olive oil
1 large eggplant, chopped
3 courgettes, chopped
1 onion, peeled and chopped
3 cloves garlic, peeled and crushed
500g tomatoes, skinned and chopped
2 green capsicum, deseeded and sliced into chunks
freshly ground black pepper, to taste
Gently heat a little olive oil in a large heavy-based saucepan. Add eggplant and stir fry quickly until brown then remove from the saucepan. Set aside.
Add more oil to the saucepan, heat then add courgettes and stir fry until just brown, then remove from pan. Add to the eggplant.
Repeat this step with the onion and garlic.
Return eggplant, courgettes, onion and garlic to the pan, add tomatoes and capsicum and stir to combine.
Bring to the boil, reduce heat and simmer until vegetables are tender.
