Minted kumara soup

The taste of mint goes well with the natural sweetness of kumara.

Minted kumara soup


Serves 4

1 Tbsp canola oil
1 onion, peeled and finely chopped
2 rashers lean bacon, finely diced
2 small kumara, peeled and diced
3 cups water
1 cup milk
2 Tbsp finely chopped fresh mint


Heat oil in a large saucepan. Add onion and bacon and stir fry for 4-5 minutes or until bacon is browned and onion is transparent.
Add kumara and water and simmer gently for 15-20 minutes or until kumara is soft. Mash to break up kumara pieces. Add milk.
Gently reheat until steaming hot.
Serve sprinkled with mint.

Suggestion: Double the recipe and freeze some for later.
