Mustard, orange kūmara and potato wedges

These wedges are really easy to make - toss everything in a roasting pan and bake until delicious and succulent.

Mustard, orange kūmara and potato wedges


Serves 5

1-2 orange kūmaras, washed and sliced into chunks
4-6 roasting potatoes, washed and sliced into wedges
2 Tbsp canola oil
1 Tbsp wholegrain mustard
1 large orange, juice and rind
orange rind, for garnish


Preheat oven to 200°C.
Place all ingredients in a roasting pan. Toss to coat.
Bake in preheated oven for 25-35 minutes or until golden brown and crunchy.
Turn several times during cooking.
Garnish with orange rind and serve.
