Onion, olives and potato pizza
Delicious, quick and easy, especially if you cook extra potatoes the night before.
1 premade pizza base
1 Tbsp olive or canola oil
4 medium general purpose potatoes, cooked, cooled and sliced
1 onion, peeled and finely sliced
½ cup chopped, pitted black olives
1 cup grated mozzarella cheese
sprigs Italian parsley, for garnish
Preheat oven to 190°C and place a baking tray in the oven to heat.
Brush the top of the pizza base with oil.
Arrange potatoes on top, add the onions and olives and sprinkle with mozzarella.
Place on the hot baking tray and bake in the preheated oven for 15-20 minutes or until golden.
Serve garnished with parsley.
