Add fresh chopped herbs once the chicken is cooked and try with potato rosti and carrot salad

Pan fried chicken pieces

500g diced chicken pieces
1 Tbsp canola oil
2 cloves garlic, crushed
¼ cup lemon juice
¼ cup water
½ cup chopped fresh herbs- coriander, parsley, thai basil

Heat oil a large pan until very hot
Add chicken and cook on one side until they are no longer stuck to the bottom
Turn them over and do the same for the other side
Once browned and loose from the pan add the garlic and cook briefly
Add lemon juice and water and cook until all has evaporated from the pan
Check the chicken is cooked through
Once cooked add the herbs and season
