Pan fried chicken pieces
Add fresh chopped herbs once the chicken is cooked and try with a carrot salad.
500g diced chicken pieces
1 Tbsp canola oil
2 cloves garlic, crushed
¼ cup lemon juice
¼ cup water
½ cup chopped fresh herbs- coriander, parsley, Thai basil
Heat oil a large frying pan until very hot.
Add chicken and cook on one side until the pieces are no longer stuck to the bottom of the frying pan.
Turn over and cook on the other side.
Once browned and loose from the pan, add the garlic and cook briefly.
Add lemon juice and water and cook until the liquid has evaporated from the frying pan.
Check the chicken is cooked through.
Once cooked, add the herbs and season.
