Parsnip and apple curry
Wonderful served with grilled sausages, steak or chops.
½ Tbsp canola oil
1 onion, peeled and diced
1-2 Tbsp red curry paste
2 large parsnips, sliced into chunks
1 cup tomato juice
1 red skinned apple, diced
Heat oil in a heavy-based pan, add onion and cook until transparent.
Add curry paste and stir fry for 1-2 minutes.
Add parsnips and tomato juice.
Bring to the boil, reduce heat and simmer for about 20 minutes or until parsnips are just soft.
Transfer to serving dish and scatter with apple on top.
