Pear, rocket and Parmesan salad
Bring a touch of Italy to the table with this traditional Italian dish.
Serves 4 as an entrée
2 cups rocket leaves
1 pear, halved, cored, thinly sliced
1 lemon, juice of
2 Tbsp sliced Parmesan cheese
1 Tbsp avocado oil
Place rocket leaves on serving plates.
Brush pear slices with lemon juice.
Place pear slices and Parmesan on the rocket.
Drizzle with avocado oil and serve.
