Peas with mint
The ultimate Christmas vegetable - peas are a delicious addition to Christmas dinner.
2 cups shelled fresh peas
2-3 sprigs mint
mint sprigs, for garnish
Place 2-3 cm of water in a saucepan with a lid and bring to the boil.
Add peas, salt and mint sprigs. Peas should be just covered with water.
Place the lid on the saucepan, quickly return to the boil, reduce heat and simmer gently for 2-3 minutes or until peas are tender. Drain and remove mint sprigs.
Place peas in a serving bowl, garnish with mint sprigs and serve.
