Pesto
Pesto is traditionally made in a mortar with the ingredients pounded with a pestle. It is far easier to make in a food processor!

Ingredients
Makes 1 cup
1 cup firmly packed basil leaves
½ cup olive oil
3-4 Tbsp pine nuts
2-3 cloves garlic, peeled and crushed
60g grated Parmesan cheese
Method
Place all ingredients in a food processor bowl and blend until combined.
Use immediately or store in the refrigerator.
Variation: for a chunky pesto, blend all ingredients except pine nuts until smooth.
Add pine nuts and pulse until chunky.
