Pizza with courgette base

Pizza with courgette base


Serves 4

Pizza base – makes 1 large or 2 small

2 medium courgettes, grated
⅔ cup self-raising flour
1 clove garlic, crushed
2 Tbsp chopped parsley
2 eggs
4 Tbsp grated cheese

4 Tbsp pizza sauce
1 cup prepared vegetables, e.g. chopped deseeded yellow/red capsicums, tomatoes, broccoli
4 Tbsp grated cheese
chopped fresh parsley, to garnish


Preheat oven to 200°C.
Place baking paper on a baking tray.
Place grated courgette in a clean tea towel or a sieve and squeeze out as much moisture as possible.
In a large bowl, combine courgette, flour, garlic, parsley, eggs and cheese to form a dough.
With clean hands make 2 circles, 1 cm thick, on baking tray.
Bake in preheated oven for about 10 minutes or until lightly golden brown and the bottoms are starting to brown.
Carefully remove from oven, flip over and top with pizza sauce.
Add vegetables and top with grated cheese. Return to oven and bake for another 3-5 minutes or until cheese is melted and bubbly.
Remove from oven, allow to cool slightly, then slice each pizza into 8 pieces. 
Garnish with parsley and serve.

Tip: Rub a drop of oil between your hands before pressing the dough to stop mixture sticking to them.
