Pork sausages with mash
This classic, hearty meal is great to serve on a cold winter's night and will satisfy hungry family members.
4 medium mashing potatoes, peeled and diced
2 carrots, peeled and roughly chopped
1 swede, kūmara or parsnip, peeled and roughly chopped
4-6 pork sausages
1½ Tbsp canola oil
2 Tbsp milk
sprigs of coriander or flat leafed parsley
Preheat grill to 200°C.
Place prepared vegetables into a large saucepan. Cover with boiling water, bring to the boil and simmer with the lid on for about 15-20 minutes, or until tender.
Grill sausages under preheated grill for 10-12 minutes, or until cooked, turning occasionally.
Drain vegetables. Mash with oil and milk.
Serve sausages on the mash, garnished with coriander or flat leafed parsley.
Tip: Use a mixture of swede, kūmara or parsnip - adjusting the amounts to suit. Alternatively use more of these vegetables in place of the potatoes.
