Potato rosti's make a great accompaniment in a meal with other vegetables.
4 potatoes, grated
2 Tbsp canola oil
black pepper to taste
Rinse grated potato in cold water.
Squeeze out as much water as possible.
Heat oil in a large frying pan over a low to medium heat.
Place handfuls of potato in the pan without crowding
Cook on one side without moving until it becomes loose from the bottom of the pan.
Flip and cook on the other side, pressing down to flatten slightly.
Cook for another 5 minutes or until cooked through and golden brown on each side.
Season and serve.
