Pumpkin pizza

A slice of tasty colour – pizza with pumpkin topped with baby spinach.

Pumpkin pizza


Makes 1 x 23 cm pizza

1 x 23 cm pre-made pizza base
2-3 tomatoes, peeled, diced and drained
1 cup diced roast pumpkin
¼ cup sliced Parmesan cheese 
1 cup torn baby spinach


Preheat oven to 200°C.
Spread tomatoes over the pizza base.
Arrange pumpkin on top of tomatoes.
Sprinkle ½ cup of spinach on top of pumpkin and add Parmesan cheese slices.
Bake in preheated oven for 12-15 minutes or until cheese is melted and golden.
Remove from oven, place on a pizza board or plate, top with remaining spinach and serve.
