Pumpkin with orange
This sweet orange sauce can be used on other vegetables such as parsnips, carrots, swedes, kumara, turnips or yams.
500g pumpkin, seeds removed, peeled and sliced into small wedges
1 Tbsp brown sugar
1 Tbsp canola oil
1 tsp grated orange rind
2 Tbsp orange juice
freshly ground black pepper, to taste
2 Tbsp toasted pine nuts
2 Tbsp finely chopped fresh herbs e.g. Italian parsley, coriander
Place pumpkin, sugar, oil, orange rind, orange juice and pepper in a microwave dish.
Mix, cover and cook on high power for 4-6 minutes or until tender.
Stir once during cooking.
To serve, place on a serving dish and sprinkle with pine nuts and herbs.
