Awesome flavours in this colourful and easy to make salad.
2 small heads radicchio, leaves separated
½ cup roasted walnuts
2 cups diced melon, or 2 oranges, peeled and segmented
2 cups grapes
2 spring onions, chopped
½ cup parsley sprigs
¼ cup olive oil
¼ cup orange juice
freshly ground pepper, to taste
Arrange radicchio on a platter, add walnuts, melon or orange, and grapes.
Sprinkle with spring onions and parsley.
Place olive oil, orange juice, salt and pepper in a screw top jar, shake well and drizzle over the salad just before serving.
