Radish, mint and cucumber salad
Radishes, mint and cucumber are a great flavour combination.
4-5 red radishes, finely diced
½ telegraph cucumber, deseeded and finely diced
2 Tbsp chopped mint leaves
2 Tbsp chopped parsley, optional
freshly ground black pepper, to taste
1-2 sprigs mint for garnish
Combine all ingredients except garnish together in a bowl.
Cover and leave in refrigerator for 30 minutes.
Serve garnished with sprigs of mint.
Variation: Add 2 Tbsp mayonnaise and use as a filling in wraps or rolls
