Raw winter vegetable salad

Raw yellow and orange vegetables make this a salad with a crisp difference.

Raw winter vegetable salad


Serves 4

4 yellow yams, sliced into quarters lengthwise
1 orange kūmara, sliced into sticks
1 cup mung bean sprouts
1 swede, sliced into sticks
1 yellow capsicum, deseeded and sliced
2 Tbsp apple cider vinegar
2 Tbsp olive oil
white pepper, to taste
pinch salt
1 Tbsp chopped coriander


Place prepared yams, kūmara, bean sprouts, swede and capsicum in a bowl.
Place vinegar and oil in a screw top bottle, shake and drizzle over the salad.
Toss and serve garnished with coriander.
