Really easy tomato salad
A quick and easy way to enjoy fresh tomatoes - they taste great with red onions in this salad.
4-6 tomatoes, sliced
1-2 red onions, finely sliced into rings
1 cup basil leaves, lightly torn if the leaves are large
¼ cup spiced or white wine vinegar
2 Tbsp canola oil
1 tsp sugar
freshly ground black pepper, to taste
Layer tomatoes, onion and basil on a serving dish.
Place vinegar, oil and sugar in a screw top jar and shake until sugar has dissolved. Pour over salad.
Sprinkle generously with pepper.
Variation: Add pitted black olives or chunks of mozzarella cheese.
