Red cabbage and cherry tomato salad
Stunning to look at and equally delicious to eat.
¼ red cabbage, finely sliced
1 x 250g punnet cherry tomatoes, sliced into quarters
1-2 spring onions, sliced diagonally
¼ cup vinaigrette
Combine all ingredients in a bowl.
Cover and leave in the fridge until ready to serve.
Transfer to serving platter and serve.
