Roasted broccoli salad

Roasting broccoli provides great flavour to enhance an array of dishes or enjoy on its own. 


Roasted broccoli salad


Serves 4

2 heads broccoli, sliced into florets
4 cloves garlic, sliced
4 Tbsp canola oil
4 Tbsp lemon juice
2 Tbsp lemon zest
pinch salt
freshly ground pepper to taste


Preheat oven to 200°C.
In a large bowl mix all ingredients together.
Spread out evenly on a roasting dish.
Roast in preheated oven for 15 minutes.
Remove from the oven and serve with grilled chicken, bread roll and salsa.
