Roasted Broccoli Salad

Roasting broccoli provides great favour you can use to enhance an array of dishes or enjoy on its own. 

Roasted Broccoli Salad

Serves 6

2 heads broccoli, cut into florets
4 cloves garlic, sliced
4 Tbsp oil
4 Tbsp lemon juice
2 Tbsp lemon zest
Pinch salt
Freshly ground pepper to taste

Pre heat oven to 200°C.
In a large bowl mix all ingredients together.
Spread out evenly on a roasting dish.
Roast in oven for 15 minutes.
Remove and serve.
Serve with grilled chicken, bread roll and salsa.
