Roasted kohlrabi and vegetables

Another tasty recipe to add to the roasted vegetable collection.

Roasted kohlrabi and vegetables


Serves 4

1 kohlrabi, peeled and chopped
1 carrot, peeled and chopped
1 kūmara, washed and chopped
1 onion, peeled and chopped
canola oil
pinch salt
white pepper, to taste
1 Tbsp chopped parsley


Preheat oven to 180°C.
Place prepared vegetables in a baking dish.
Drizzle with oil and sprinkle with salt and pepper. Toss gently.
Bake for 20-30 minutes, or until soft and the edges are golden.
