Salmon and cream cheese mash
This transforms mash into something extremely special!
500g mashing potatoes, peeled and diced
100g low fat cream cheese
75g smoked salmon, thinly sliced
50g pitted black olives, sliced (optional)
1 Tbsp capers (optional)
2 Tbsp chopped chives
freshly ground black pepper, to taste
Boil potatoes for 8-10 minutes or until tender.
Drain and return to the pan.
Mash with the cream cheese, adding a dash of milk for a softer consistency.
Stir in olives, capers, chives, salt and pepper.
Suggestion: Use flaked hot smoked salmon.
